I don't normally spend too much time reading Nigella Lawson. She has some good ideas, but spends too little time on the basics. Anyway, found this recipe which she claims was given to her by her mother. It is for crunchy Oatmeal biscuits. Tried it last night and it's outrageously good. Simple too.
Nigella Lawson Crisp cookies
100 grams flour 100 grams porridge oats ½ teaspoon bicarbonate of soda 1 tsp baking powder
100 grams butter (or margarine) 100 grams granulated sugar 1 tbs golden syrup
Mix flour, oats, and bicarbonate of soda together in a bowl put to one side. Melt margarine or butter, sugar and golden syrup on a low heat until butter and sugar are melted, stir occasionally, Take off heat and stir in the oat mix, 'fold in', well with a wooden spoon. Scoop dessertspoons of mixture up and make into ball shapes and place on a greased baking tray when the tray is full slightly flatten the balls out with a fork. Cook in the oven for 15 minutes 180C, Leave to cool on the baking sheet for 5 mins before moving onto a wire rack, where they should cool completely Makes about 12. Lasts for as long as you can bear not to eat them.
