This costs a fortune in swanky restaurants.
Take stock of whatever vegetables you have on the brink of self destruction. You can also add any veg that you are not sure of in the organic food delivery, just remember that aubergine purple is not appetising, so chop and add that later.
Pearl barley and split peas are a good addition as they thicken the stock, but take a bit longer to cook, so soak them first. Look in the fridge and find any leftover cooked potatoes, cheese, herbs etc.
Wash peel and roughly chop the vegetables.
Place vegetables in pot or slow cooker with stock. Cheap bitter beer that nobody wants to drink or odd ends of fruit juice adds a nice flavour.
Cook slowly until the veg is all soft enough to put through the blender.
After blending return to heat, add any odds that will remain as visible chunks (remember that aubergine).
Add cheese and cook until melted.
Correct seasoning to taste.
Serve in a bowl with crusty bread and sprinkled with chopped herbs, or a swirl of cream, if you have them.
